Podi Idli with South Indian Spice Mix

Soft, fluffy idlis tossed in a fragrant South Indian spice mix — a simple, comforting breakfast or snack made with Amma’s Special Idli Dosa Batter. Quick to prepare and full of traditional homemade flavour.

Ingredients
For the Idli
- Amma’s Special Idli Dosa Batter – enough for 10–12 idlis
- Salt to taste, if required
- Oil or ghee for cooking
For the Podi Masala
- 3 tbsp South Indian idli podi
- 1 tbsp sesame oil or ghee
- ½ tsp mustard seeds
- ½ tsp urad dal
- A few curry leaves
- 1–2 dried red chillies
- ¼ tsp turmeric powder
- 1 tbsp finely chopped fresh coriander leaves
Instructions
- Steam Amma’s Special Idli Dosa Batter in an idli steamer until the idlis are soft, fluffy, and cooked through. Allow them to cool slightly.
- Remove the idlis from the moulds. For bite-sized podi idli, cut each idli into halves or quarters.
- Heat sesame oil or ghee in a wide pan over medium heat.
- Add mustard seeds and let them crackle. Add urad dal, dried red chillies, and curry leaves. Sauté until fragrant and lightly golden.
- Lower the heat and add the idli podi and turmeric powder. Stir gently for a few seconds so the podi becomes aromatic without burning.
- Add the steamed idli pieces and gently toss until they are evenly coated with the spice mixture.
- Cook for 2–3 minutes on low heat, allowing the idlis to absorb the flavours and develop a lightly crisp coating.
- Garnish with fresh coriander and serve warm.
Notes
- Freshly steamed idlis work beautifully for this recipe, but slightly cooled idlis are easier to cut and toss.
- Adjust the amount of podi according to your preferred spice level.
- Sesame oil gives the podi idli a more traditional South Indian flavour, while ghee adds a rich, comforting taste.
- For extra texture, lightly pan-fry the idli pieces before adding the podi masala.
