Can I use the same batter for both idli and dosa?

Special batter works for both — keep it as is for soft, fluffy idlis, or add a little water to thin it out for a smooth, spreadable dosa batter that cooks up crispy on a hot tawa.

A dosa turns soft instead of crispy usually because the tawa wasn’t hot enough, the batter was spread too thick, or too much oil was used. Spread the batter thin on a well-heated tawa and use oil sparingly around the edges for the best crunch.

Idli and dosa are rice-and-lentil based, so they do contain carbohydrates. People managing blood sugar closely or following strict low-carb diets should enjoy them in moderation, or try our millet and ragi batter options, which have a comparatively lower glycemic impact.
